People who meet me for the first time don’t associate me with cooking.
I treat them as managers who run the restaurant business, but
I don’t think they cook and even develop menus. But I am a chef and a manager.
I don’t want to be called only as a chef or manager, I want to be called a ‘food explorer’.
‘Baek Jong-won’ is a person who aims for endless interest in and exploration of food, a person who wants to know more about food than anyone else.
To this day, I build and demolish dozens of restaurants in my head, drawing customers’ happy faces.
It is fun to think about what kind of food to present and what concept customers will like.
There are more brands that will unfold in the future than the brands that have been showcased so far, so I am thinking about delicious things today.
